Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Scrub and pierce the sweet potatoes with a fork to allow steam to escape.
  3. Place sweet potatoes on a baking sheet, drizzle with olive oil, and sprinkle with salt, pepper, and smoked paprika.
  4. Roast in the oven for about 30-40 minutes, or until fork-tender and golden.
Preparation of Burrata
  1. While sweet potatoes are roasting, take the burrata cheese out of the fridge to come to room temperature.

  1. Once sweet potatoes are out of the oven, let them cool for a few minutes.
  2. Slice them open and place a generous scoop of burrata into each sweet potato.
  3. Sprinkle with fresh herbs and drizzle with honey or balsamic glaze if desired.
