  • 1 pound ground beef (or turkey for a lighter option)
  • 1 packet taco seasoning
  • 1 cup ranch dressing
  • 1 cup shredded cheese (cheddar or a blend)
  • 1 cup corn (canned or frozen)
  • 1 cup black beans (drained and rinsed)
  • to taste fresh cilantro (for garnish)
  • as needed servings tortilla chips because snacks should always be fabulous

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef (or turkey) for about 5-7 minutes.
  3. Drain any excess grease from the meat.
  4. Stir in the taco seasoning along with about 1/4 cup of water and let it simmer for a couple of minutes until it thickens.
  5. In a big mixing bowl, combine the cooked meat with ranch dressing, corn, and black beans.
  6. Layer tortilla chips in a baking dish and pour the Taco Ranch mixture over the chips.
  7. Sprinkle shredded cheese on top.
Cooking
  1. Bake in the oven for about 15-20 minutes, or until the cheese is bubbly and golden brown.
  2. Once out of the oven, let it cool for a minute, then sprinkle fresh cilantro on top.
  3. Serve with extra ranch dressing or guacamole on the side.

Notes

Feel free to customize by adding spicy jalapeños or skipping beans. Assemble ahead of time, and bake when ready. Embrace the delicious chaos if layers tumble when serving.
