Ingredients
  

Main Ingredients
  • 1.5 lbs ground beef (or turkey) Use ground turkey for a lighter option.
  • 1 cup breadcrumbs
  • 1 cup shredded Mexican cheese blend Add more cheese for topping if desired.
  • 1 can (15 oz) black beans, drained and rinsed Can substitute with other beans if needed.
  • 1 cup salsa
  • 1 packet taco seasoning
  • 2 large eggs
  • 0.5 cup chopped onion Use more or less depending on preference.
  • 1 piece bell pepper Any color is fine.
  • Salt and pepper to taste
Optional Toppings
  • more cheese For added flavor.
  • shredded lettuce Fresh toppings enhance flavor.
  • crushed tortilla chips Great for added crunch.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the ground beef, breadcrumbs, shredded cheese, black beans, salsa, taco seasoning, eggs, chopped onion, and bell pepper.
  3. Mix everything together with your hands until well-blended.
  4. Shape the mixture into a loaf form and place it in a greased baking dish.
Baking
  1. Bake for about 45-60 minutes, or until the internal temperature reaches 160°F (70°C).
  2. If adding more cheese, sprinkle it on top during the last 10 minutes of baking.
Finishing Touches
  1. Let the meatloaf rest for about 10 minutes before slicing.
  2. Serve topped with your favorite taco toppings like shredded lettuce, crushed tortilla chips, or sour cream.

Notes

Can substitute ground beef with ground chicken or plant-based options. Leftovers can be used in sandwiches or tacos.
