  • 2 cups coconut milk the creamier, the better!
  • 1 tablespoon maple syrup or honey, if you’re feeling sweet
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
Toppings
  • Shredded coconut for a delightful topping
  • Fresh fruits like bananas, berries, or whatever else is in your fridge
  • Your choice of nuts and seeds optional but highly recommended!

Cooking
  1. In a medium saucepan, bring the 2 cups of coconut milk to a gentle boil.
  2. Add in your rolled oats, salt, and vanilla extract. Reduce the heat and let it simmer for about 5 minutes, stirring occasionally.
  3. Stir in the maple syrup (or honey) once the oats have become creamy and thick. Feel free to adjust the sweetness to your liking.
  4. Spoon the oats into your favorite bowl and add all the yummy toppings you desire.

Notes

Make it ahead: Consider making a big batch on Sunday. Just reheat, add toppings, and you’ve got breakfast for the week! If unable to find coconut milk, almond milk or oat milk are good alternatives.
