Cooking Steps
- In a large cast-iron pot or Dutch oven, heat a drizzle of olive oil over medium-high heat.
- Season the chuck roast with salt and pepper, then carefully place it in the pan and sear until golden brown on all sides (about 4-5 minutes per side).
- Remove the roast and set it aside. In the same pot, add the chopped onion and minced garlic. Sauté for 2-3 minutes until fragrant.
- Return the roast to the pot with the onion and garlic, add the beef broth, Worcestershire sauce, and thyme.
- Tuck the carrots and potatoes around the roast.
- Cover the pot with a lid and simmer on low heat for about 3-4 hours.
- About 30 minutes before serving, add mushrooms to the pot.
- Once tender, serve the chuck roast with veggies and drizzle the mushroom gravy over the top.
Notes
The key to a tender roast is low and slow cooking. Adjust gravy thickness by using cornstarch if desired.
