Main Ingredients
  • 3-4 lb chuck roast A tender cut ideal for slow cooking.
  • 4 medium carrots, peeled and cut into chunks
  • 4 medium potatoes, peeled and cut into chunks
  • 1 large onion, chopped
  • 2 cups beef broth
  • 1 cup mushrooms, sliced Optional, can substitute with bell peppers.
  • 2 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon thyme Dried or fresh, adds flavor.
  • Salt and pepper, to taste
  • Olive oil, for searing Use to heat the pot.

Method
 

Cooking Steps
  1. In a large cast-iron pot or Dutch oven, heat a drizzle of olive oil over medium-high heat.
  2. Season the chuck roast with salt and pepper, then carefully place it in the pan and sear until golden brown on all sides (about 4-5 minutes per side).
  3. Remove the roast and set it aside. In the same pot, add the chopped onion and minced garlic. Sauté for 2-3 minutes until fragrant.
  4. Return the roast to the pot with the onion and garlic, add the beef broth, Worcestershire sauce, and thyme.
  5. Tuck the carrots and potatoes around the roast.
  6. Cover the pot with a lid and simmer on low heat for about 3-4 hours.
  7. About 30 minutes before serving, add mushrooms to the pot.
  8. Once tender, serve the chuck roast with veggies and drizzle the mushroom gravy over the top.

Notes

The key to a tender roast is low and slow cooking. Adjust gravy thickness by using cornstarch if desired.
