  • 1 piece bone-in lamb shoulder (4-5 lbs) A large bone-in shoulder for the best flavor.
  • 4 tablespoons olive oil For rubbing the lamb.
  • 4 cloves garlic, minced Fresh garlic adds great flavor.
  • 2 tablespoons fresh rosemary, chopped Dried rosemary can be used as a substitute.
  • 1/4 cup honey Essential for the glaze.
  • 1 teaspoon paprika Optional for a bit of kick.
  • 1 cup chicken or vegetable broth To enhance the glaze.
  • to taste salt and pepper For seasoning.

Method
 

Preparation
  1. Preheat your oven to 300°F (150°C).
  2. Rub the lamb shoulder with olive oil, minced garlic, salt, pepper, and paprika.
  3. Sprinkle the minced rosemary over the lamb.
  4. In a small bowl, mix together honey and broth, then pour it over the lamb.
  5. Place the lamb in a roasting pan, cover it with aluminum foil, and roast for about 4-5 hours.
  6. In the last 30 minutes, remove the foil to allow the glaze to caramelize.
  7. Once done, let the lamb rest for about 15 minutes before carving and serving.

Notes

You can prep the lamb the night before for enhanced flavors. Pair it with roasted vegetables or mashed potatoes. Leftovers can be enjoyed in sandwiches or salads.
