Preparation
- Rinse the shrimp under cold water and pat them dry with paper towels.
- In a large bowl, combine olive oil, lemon juice, minced garlic, smoked paprika, oregano, salt, and pepper. Whisk until well mixed.
- Add the shrimp to the marinade and let soak for about 15-30 minutes.
- Preheat your grill to medium-high heat.
- If using wooden skewers, soak them in water for about 30 minutes to prevent burning. After marinating, thread shrimp onto skewers.
- Grill shrimp for about 2-3 minutes per side, until they turn pink and opaque.
- Remove shrimp from the grill and serve hot with lemon wedges on the side.
Notes
Don’t overcook the shrimp to avoid rubberiness. Leftover shrimp can be used in salads.
