Ingredients
  

For the Marinade and Skewers
  • 1 pound flank steak, sliced into thin strips
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 tablespoon lime juice
  • Salt and pepper, to taste
For the Thai Peanut Sauce
  • 1/2 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon sesame oil
  • 1-2 teaspoons chili garlic sauce (adjust to your spice preference)
  • Water, as needed to thin the sauce
For Serving
  • Chopped green onions
  • Crushed peanuts
  • Lime wedges

Method
 

Preparation
  1. In a medium bowl, combine the soy sauce, brown sugar, vegetable oil, minced garlic, ginger, lime juice, salt, and pepper. Add the sliced flank steak and make sure every piece has a good coating of the marinade. Let it sit for at least 30 minutes, or refrigerate for a couple of hours.
  2. If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
  3. For the peanut sauce, blend together the peanut butter, soy sauce, lime juice, honey, sesame oil, and chili garlic sauce, adding water gradually until you reach your desired consistency.
  4. Thread the marinated steak strips onto the skewers.
Grilling
  1. Preheat your grill to medium-high. Grill the skewers for about 2-3 minutes on each side or until cooked to your desired doneness.
  2. Once off the grill, drizzle the skewers with the Thai peanut sauce and top with chopped green onions and crushed peanuts.
Serving
  1. Serve with lime wedges on the side for added flavor.

Notes

Feel free to swap the steak with chicken or tofu. Leftover peanut sauce can be used as a dip or sandwich spread.
