Preparation
- Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the eggs, milk, vegetable oil, and vanilla extract. Mix until smooth, but don't over-mix.
- Carefully stir in the boiling water.
Baking
- Divide the batter evenly between the two prepared pans and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
Cooling and Frosting
- Allow cakes to cool in the pans for 15 minutes before transferring them to a wire rack.
- Frost with your favorite chocolate frosting or dust with powdered sugar when cooled.
Notes
Mixing the batter for a couple of extra minutes can create a fluffier cake. Use high-quality cocoa powder for better flavor. Optionally, add a layer of chocolate ganache or sea salt on top for decoration.
