  • 1.75 cups all-purpose flour
  • 2 cups granulated sugar
  • 0.75 cups unsweetened cocoa powder
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoons salt
Wet Ingredients
  • 2 large eggs
  • 1 cup whole milk
  • 0.5 cups vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water Helps keep the cake moist

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, vegetable oil, and vanilla extract. Mix until smooth, but don't over-mix.
  4. Carefully stir in the boiling water.
Baking
  1. Divide the batter evenly between the two prepared pans and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
Cooling and Frosting
  1. Allow cakes to cool in the pans for 15 minutes before transferring them to a wire rack.
  2. Frost with your favorite chocolate frosting or dust with powdered sugar when cooled.

Notes

Mixing the batter for a couple of extra minutes can create a fluffier cake. Use high-quality cocoa powder for better flavor. Optionally, add a layer of chocolate ganache or sea salt on top for decoration.
