Preparation
- Preheat your oven to 375°F (190°C).
- In a medium bowl, combine the diced tomatoes, garlic, basil, olive oil, balsamic vinegar, and a pinch of salt and pepper. Stir gently.
- In another bowl, mix together the mozzarella, goat cheese, and Parmesan.
Assembly
- In a baking dish, layer half of the tomato mixture, followed by half of the cheese mixture. Repeat this process, finishing with a layer of cheese on top.
Baking
- Bake for about 20-25 minutes, or until bubbly and golden on top.
- Once out of the oven, let it cool for a couple of minutes before serving.
Serving
- Serve warm with toasted baguette slices or pita chips.
Notes
Make ahead by assembling a few hours in advance and store in the fridge. Customize with extras like olives or sun-dried tomatoes.
