Ingredients
  

For the dip
  • 1 cup diced fresh tomatoes
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled goat cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 2 cloves garlic, minced
  • Salt and pepper to taste
For serving
  • Toasted baguette slices or pita chips For dipping

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, combine the diced tomatoes, garlic, basil, olive oil, balsamic vinegar, and a pinch of salt and pepper. Stir gently.
  3. In another bowl, mix together the mozzarella, goat cheese, and Parmesan.
Assembly
  1. In a baking dish, layer half of the tomato mixture, followed by half of the cheese mixture. Repeat this process, finishing with a layer of cheese on top.
Baking
  1. Bake for about 20-25 minutes, or until bubbly and golden on top.
  2. Once out of the oven, let it cool for a couple of minutes before serving.
Serving
  1. Serve warm with toasted baguette slices or pita chips.

Notes

Make ahead by assembling a few hours in advance and store in the fridge. Customize with extras like olives or sun-dried tomatoes.
