Cheese Mixture
  • 1 cup cream cheese, softened Use full-fat cream cheese for best results.
  • 1 cup shredded mozzarella cheese Feel free to use low-fat if preferred.
  • 1 cup grated Parmesan cheese
Additional Ingredients
  • 1 cup diced tomatoes (fresh or canned) Drain excess liquid if using canned tomatoes.
  • 1/4 cup chopped fresh basil Or 1 teaspoon dried basil.
  • 1 teaspoon minced garlic
  • to taste none Salt and pepper
  • 1/2 teaspoon balsamic vinegar (optional) Recommended for added flavor.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the softened cream cheese, shredded mozzarella, and grated Parmesan cheese. Mix until well blended.
  3. Add the diced tomatoes, fresh basil, minced garlic, balsamic vinegar, salt, and pepper. Stir until combined.
Baking
  1. Transfer the mixture into a baking dish and bake for 20-25 minutes, or until the top is golden and bubbly.

  1. Let the dip cool for a minute before serving with toasted baguette slices, crackers, or fresh veggies.

Notes

Feel free to add red pepper flakes for heat or sautéed mushrooms for extra flavor. This dip can be made a day in advance.
