  • 2 cups diced tomatoes Fresh is best, but canned works in a pinch!
  • 1 cup cream cheese Softened
  • ½ cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • ¼ cup chopped fresh basil For flavor
  • 2 cloves garlic Minced
  • 1 tablespoon olive oil For richness
  • to taste salt and pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the softened cream cheese, shredded mozzarella, and grated Parmesan.
  3. Add the diced tomatoes, minced garlic, and chopped basil. Lightly season with salt and pepper, then stir until well blended.
  4. Spread the mixture into a baking dish about 8x8 inches.
  5. Drizzle the top with olive oil.
  6. Bake for 20-25 minutes or until the dip is bubbly and golden.
  7. Remove from the oven and let cool slightly before serving.
Serving
  1. Serve with tortilla chips, crusty bread, or fresh veggies.

Notes

You can mix in goat cheese or feta for extra flavor. The dip can be prepared ahead of time and refrigerated. Leftovers can be stored in an airtight container in the fridge for 3-4 days.
