Ingredients
  

Main Ingredients
  • 1 whole whole chicken (about 4-5 pounds)
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • to taste Salt and pepper
  • 4 shallots, peeled and halved
  • 1 cup grapes (red or green)
  • 1/2 cup chicken broth
  • 1 tablespoon honey

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Rinse the chicken and pat it dry with paper towels, then place it in a large roasting pan.
  3. Drizzle with olive oil, season with fresh thyme, salt, and pepper, and massage the spices into the chicken.
  4. Scatter the halved shallots and grapes around the chicken in the pan.
  5. Pour the chicken broth into the bottom of the pan.
  6. Drizzle honey over the shallots and grapes.
Cooking
  1. Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C).
  2. Baste the chicken halfway through if desired.
  3. Let the chicken rest for about 10 minutes before carving.

Notes

Feel free to substitute thyme with rosemary or sage. This dish is perfect for meal prep and can be paired with a crisp green salad or roasted veggies for a complete meal.
