- Chop the ripe pineapple into bite-sized pieces.
- In a medium bowl, whisk together the flour, sugar, baking powder, salt, and ground cinnamon until well combined.
- Gradually add the coconut milk, mixing until the batter is smooth and lump-free.
Cooking
- Dip each pineapple chunk into the batter, ensuring it's fully coated.
- In a skillet over medium heat, pour in enough oil to cover the bottom by about an inch.
- Once hot, gently place in the battered pineapple pieces in batches and fry for about 2-3 minutes on each side, or until golden brown.
- Remove the fritters using a slotted spoon and drain on paper towels. Optionally, dust with powdered sugar before serving.
Notes
Make sure your oil is hot enough before frying to prevent sogginess. Experiment with flavors by adding a splash of vanilla or nutmeg. Serve with a drizzle of honey or whipped cream for extra enjoyment.
