Ingredients
  

For the Cake
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 3 large eggs
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 1/2 cups smashed ripe bananas (approximately 4 bananas)
  • 1 cup crushed pineapple, drained
  • 1/2 cup chopped pecans or walnuts (optional)
For the Cream Cheese Frosting
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons milk (as needed for consistency)

Method
 

Preparation
  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
  3. In a large bowl, whisk together granulated sugar, brown sugar, and eggs until well combined, then mix in vegetable oil and vanilla.
  4. Fold in the mashed bananas, crushed pineapple, and nuts, if using.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
Baking
  1. Evenly divide the batter between the prepared pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  2. Let the cakes cool in the pans for about 10 minutes before turning them out onto wire racks to cool completely.
Frosting
  1. In a bowl, beat together the cream cheese and butter until creamy. Gradually add in the powdered sugar and mix in vanilla extract.
  2. Add milk as needed to reach desired consistency for spreading.
  3. Once the cakes are completely cool, frost the top of one layer, place the second layer on top, and frost the top and sides.

Notes

If you're out of ripe bananas, bake firmer ones at 300°F for 15-20 minutes to use. Also, adjust the milk in the frosting for your preferred consistency.
