- Season the chicken breasts with salt, pepper, and Italian seasoning.
Cooking
- Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook for 6-7 minutes on each side until golden brown and cooked through.
- Remove chicken from the skillet and set aside.
- Add minced garlic to the same skillet and cook for about 30 seconds until fragrant.
- Add cherry tomatoes and spinach and sauté for 3-4 minutes until the spinach is wilted and tomatoes are soft.
- Pour in the heavy cream and bring to a gentle simmer. Stir in grated parmesan cheese until melted and sauce thickens.
- Return chicken to the skillet, coat with sauce, and let simmer for another minute or two.
- Plate the dish, garnish with fresh basil, and serve.
Notes
Use pre-cooked or rotisserie chicken for a quicker option. This dish pairs well with rice, pasta, or crusty bread.
