  • 4 pieces boneless, skinless chicken breasts
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach (fresh or frozen)
  • 1/2 cup heavy cream
  • 1/2 cup parmesan cheese, grated
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish optional

Preparation
  1. Season the chicken breasts with salt, pepper, and Italian seasoning.
Cooking
  1. Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook for 6-7 minutes on each side until golden brown and cooked through.
  2. Remove chicken from the skillet and set aside.
  3. Add minced garlic to the same skillet and cook for about 30 seconds until fragrant.
  4. Add cherry tomatoes and spinach and sauté for 3-4 minutes until the spinach is wilted and tomatoes are soft.
  5. Pour in the heavy cream and bring to a gentle simmer. Stir in grated parmesan cheese until melted and sauce thickens.
  6. Return chicken to the skillet, coat with sauce, and let simmer for another minute or two.
  7. Plate the dish, garnish with fresh basil, and serve.

Notes

Use pre-cooked or rotisserie chicken for a quicker option. This dish pairs well with rice, pasta, or crusty bread.
