Preparation
- In a large skillet, heat the olive oil over medium heat.
- Add the chopped onions and sauté until they become translucent—about 3-4 minutes.
Cooking
- Add the sliced mushrooms to the pan and continue cooking for another 5 minutes, stirring occasionally.
- Now add the diced zucchinis, oregano, thyme, salt, and pepper. Sauté for another 5-7 minutes until the zucchini is tender yet still has a little crunch.
- Toss in the cherry tomatoes and minced garlic. Cook for another 2-3 minutes until the tomatoes soften.
Serving
- Remove from heat and garnish with fresh basil leaves before serving.
Notes
You can substitute zucchini with yellow squash or bell peppers. For a heartier meal, add cooked pasta or quinoa.
