Ingredients
  

For the Tzatziki Chicken Skewers
  • 1 pound chicken breast, cut into cubes
  • 1 cup plain Greek yogurt
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried dill
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • Skewers (wooden or metal)
For the Crispy Herb Feta Fries
  • 2 large russet potatoes, cut into fries
  • 1 cup crumbled feta cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon garlic powder
  • Olive oil for drizzling
  • Salt and pepper to taste

Method
 

Marinate the Chicken
  1. In a bowl, mix together Greek yogurt, olive oil, minced garlic, dried dill, lemon juice, salt, and pepper. Toss the chicken cubes into this flavorful mixture, making sure they’re well coated. Cover and let it marinate in the fridge for at least 30 minutes.
Prep the Fries
  1. While the chicken marinates, preheat your oven to 425°F (220°C). Spread the cut potatoes onto a baking sheet. Drizzle with olive oil, sprinkle garlic powder, salt, and pepper, and toss until they’re coated. Bake for about 25-30 minutes or until they’re golden brown and crispy.
Skewer the Chicken
  1. Once your chicken has marinated, thread the chicken onto the skewers, leaving a little space between each piece.
Grill or Bake the Skewers
  1. Grill the skewers on an outdoor grill for about 8-10 minutes (turning halfway through) or bake them in the oven at 375°F (190°C) until they’re cooked through.
Finish the Fries
  1. In the last 5 minutes of the fries' baking time, sprinkle the crumbled feta cheese and fresh parsley over the hot fries. Pop them back in the oven just until the cheese starts to soften.

Notes

If you’re in a pinch for time, consider using pre-cut chicken or seasoned chicken strips! Don’t be afraid to sprinkle your fries with a dash of paprika or chili powder for an extra kick. If your tzatziki looks a bit lumpy, it’s all about flavor and we love a little character in our sauces.
