- Mix the fresh blackberries with the balsamic vinegar, salt, and pepper in a small bowl. Let them sit for a minute.
- Spread a generous layer of softened butter on one side of each slice of bread.
Cooking
- Place one slice of bread butter-side-down on a skillet over medium heat. Add a layer of shredded cheddar, followed by your balsamic blackberries, and top with more cheese.
- Place the second slice of bread butter-side-up on top.
- Cook for about 3-4 minutes or until the bottom is golden brown and the cheese starts to melt. Flip it carefully and grill the other side until it's golden brown and oozing cheesy goodness.
- Remove the sandwich from the skillet and let it rest for a minute before slicing in half.
Notes
Switch up your cheese for variations; use other fruits if you're not a blackberry fan. Enjoy alongside a side salad or tomato soup.
