Ingredients
  

For the Sandwich
  • 2 slices slices of rustic bread Sourdough works well
  • 2 tablespoons butter, softened For spreading on the bread
  • 1/2 cup fresh blackberries Fresh, can be substituted with other fruits
  • 1 tablespoon balsamic vinegar
  • 1/2 cup shredded sharp cheddar cheese Or any cheese that melts well
  • 1 pinch salt
  • 1 dash pepper

Method
 

Preparation
  1. Mix the fresh blackberries with the balsamic vinegar, salt, and pepper in a small bowl. Let them sit for a minute.
  2. Spread a generous layer of softened butter on one side of each slice of bread.
Cooking
  1. Place one slice of bread butter-side-down on a skillet over medium heat. Add a layer of shredded cheddar, followed by your balsamic blackberries, and top with more cheese.
  2. Place the second slice of bread butter-side-up on top.
  3. Cook for about 3-4 minutes or until the bottom is golden brown and the cheese starts to melt. Flip it carefully and grill the other side until it's golden brown and oozing cheesy goodness.
  4. Remove the sandwich from the skillet and let it rest for a minute before slicing in half.

Notes

Switch up your cheese for variations; use other fruits if you're not a blackberry fan. Enjoy alongside a side salad or tomato soup.
