Ingredients
  

For the cake
  • 1 ¾ cups all-purpose flour
  • 1 ¾ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs Use room temperature for better rise.
  • 1 cup whole milk
  • ½ cup vegetable oil Can substitute with melted coconut oil or applesauce.
  • 2 teaspoons vanilla extract
  • 1 cup boiling water This step adds moisture to the cake.
For the frosting
  • 1 cup unsalted butter, softened
  • 3 ½ cups powdered sugar Sifted for a smooth texture.
  • ½ cup unsweetened cocoa powder
  • ½ cup heavy cream
  • 2 teaspoons vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk well.
  3. Add the eggs, milk, oil, and vanilla extract to the dry mix. Beat on medium speed for about 2 minutes, then slowly stir in the boiling water.
Baking
  1. Divide the batter evenly between two greased 9-inch round pans.
  2. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
Frosting
  1. Once the cakes are cooled, beat the softened butter until creamy.
  2. Add the powdered sugar and cocoa powder, gradually mixing in the heavy cream and vanilla extract until light and fluffy.
Assembly
  1. Place one cake layer on a serving plate and spread a layer of frosting on top.
  2. Gently place the second layer on top and frost the entire cake.
