Ingredients
  

For the Salad
  • 4 large carrots The brighter, the better!
  • 1 piece bell pepper Any color you fancy.
  • 1/2 cup raisins For sweetness.
  • 1/4 cup chopped fresh parsley For freshness.
For the Dressing
  • 1/4 cup olive oil Liquid gold.
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey or maple syrup Sweeten to your heart’s content.
  • Salt and pepper To taste.
  • pinch crushed red pepper flakes Optional, for a kick.

Method
 

Preparation
  1. Peel the carrots and shred them using a grater or food processor. Alternatively, spiralize the carrots for a fancy presentation.
  2. Dice the bell pepper and add it to the bowl of shredded carrots along with the raisins and chopped parsley.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, apple cider vinegar, honey (or maple syrup), salt, pepper, and red pepper flakes. Adjust the seasoning to taste.
Combine and Chill
  1. Pour the dressing over the carrot mixture and toss until all ingredients are well coated.
  2. Allow the salad to sit in the fridge for 15-30 minutes to meld the flavors.

Notes

For best results, use fresh ingredients. Consider adding nuts or other veggies for added crunch. If the dressing thickens, whisk in a little water or extra oil.
