Preparation
- Peel the carrots and shred them using a grater or food processor. Alternatively, spiralize the carrots for a fancy presentation.
- Dice the bell pepper and add it to the bowl of shredded carrots along with the raisins and chopped parsley.
Make the Dressing
- In a small bowl, whisk together the olive oil, apple cider vinegar, honey (or maple syrup), salt, pepper, and red pepper flakes. Adjust the seasoning to taste.
Combine and Chill
- Pour the dressing over the carrot mixture and toss until all ingredients are well coated.
- Allow the salad to sit in the fridge for 15-30 minutes to meld the flavors.
Notes
