Ingredients
  

For the whipped feta
  • 8 ounces feta cheese, crumbled Choose a good, brined feta for maximum flavor.
  • 4 ounces cream cheese, softened Can substitute with Greek yogurt for a lighter option.
  • 2 tablespoons olive oil Add more as needed for desired texture.
  • 1 tablespoon lemon juice
  • 1 pinch black pepper
For the roasted strawberries
  • 1 pound strawberries, hulled and halved Fresh strawberries are recommended.
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • 1 pinch salt

Method
 

Roast the strawberries
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, toss the halved strawberries with honey, balsamic vinegar, and a sprinkle of salt. Spread them out on the prepared baking sheet.
  3. Roast the strawberries for about 20-25 minutes until they’ve softened and the juices are bubbling.
Whip up the feta
  1. In a food processor, combine the crumbled feta, cream cheese, olive oil, lemon juice, and black pepper.
  2. Blend until smooth and creamy, adding more olive oil if needed for the right texture.
Serve
  1. Spread the whipped feta on a serving platter and spoon the roasted strawberries over top.
  2. Garnish with fresh herbs like mint or basil and serve with crackers or fresh veggies.

Notes

Store leftovers in an airtight container in the fridge for up to three days. The dish can be customized with different fruits, like raspberries or peaches.
