Method
Roast the strawberries
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

- Roast the strawberries for about 20-25 minutes until they’ve softened and the juices are bubbling.
Whip up the feta
- In a food processor, combine the crumbled feta, cream cheese, olive oil, lemon juice, and black pepper.
- Blend until smooth and creamy, adding more olive oil if needed for the right texture.
Serve
- Spread the whipped feta on a serving platter and spoon the roasted strawberries over top.
- Garnish with fresh herbs like mint or basil and serve with crackers or fresh veggies.
Notes
Store leftovers in an airtight container in the fridge for up to three days. The dish can be customized with different fruits, like raspberries or peaches.
