Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until combined, resembling damp sand. Press this mixture into the bottom of a 9-inch springform pan.
- Bake the crust for 10 minutes and let it cool.
Create the Cheesecake Filling
- In another bowl, beat the softened cream cheese until smooth.
- Gradually add the powdered sugar and vanilla extract, mixing until well combined.
- Gently fold in the melted white chocolate.
- Whip the heavy cream until stiff peaks form, then fold it into the cheesecake mixture.
Assemble and Chill
- Pour the creamy cheesecake filling into the cooled crust and smooth out the top.
- Cover the cheesecake and refrigerate for at least 4 hours, or overnight if possible.
Top and Serve
- Before serving, layer the sliced strawberries on top and drizzle with melted white chocolate.
Notes
Chilling is key for the cheesecake to set properly. You can also use an 8x8 inch pan if you don't have a springform pan.
