Ingredients
  

For the soup
  • 4 cups chicken or vegetable broth store-bought for speed, homemade for soul
  • 2 cups water
  • 1 cup shiitake mushrooms, sliced or your favorite mushrooms
  • 1 tablespoon soy sauce for an umami punch
  • 1 tablespoon sesame oil
  • 2 pieces green onions, chopped for a fresh kick
  • Salt and pepper to taste
For the wontons
  • 1 package wonton wrappers they're not as intimidating as they seem
  • 1 cup ground pork or chicken or tofu for a veggie option
  • 1 tablespoon minced ginger
  • 1 tablespoon minced garlic
  • 1 tablespoon soy sauce
  • 1 tablespoon chopped parsley or cilantro for that fresh touch
For the noodles
  • 2 cups fresh egg noodles or ramen noodles whatever you have on hand

Method
 

Preparation
  1. In a bowl, combine your ground meat (or tofu), ginger, garlic, soy sauce, and parsley or cilantro.
  2. Take a wonton wrapper, spoon about a teaspoon of the filling into the center. Moisten the edges with water and fold them over, sealing tightly. Place them on a floured surface to avoid stickiness.
  3. Repeat until your filling is gone.
Prepare the Soup Base
  1. In a large pot, combine the chicken or vegetable broth and water. Bring it to a gentle boil.
  2. Add in the sliced shiitake mushrooms, soy sauce, and sesame oil. Let that simmer for about 10 minutes.
Cook the Wontons
  1. Drop the wontons into the broth. Let them simmer for about 5-7 minutes, until they float to the top.
Cook the Noodles
  1. Prepare the noodles according to package instructions.
Assemble Your Dish
  1. In serving bowls, layer the cooked noodles, then gently ladle the broth and wonton-filled goodness over them.
  2. Garnish with chopped green onions and a dash of salt and pepper if desired.

Notes

Add baby spinach or bok choy for color during the last few minutes of cooking. Don't fret if wontons are lopsided. Cloudy broth is a sign of flavor!
