Ingredients
  

Vegetable Base
  • 4 medium yellow squash, sliced thinly
  • 1 medium onion, chopped
Casserole Mixture
  • 1 cup shredded cheddar cheese Adds flavor and texture
  • 1 cup sour cream
  • 2 large eggs, beaten
  • ½ cup melted butter
Crispy Topping
  • 1 cup crushed butter crackers Provides a satisfying crunch
Seasoning
  • to taste salt
  • to taste pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, sauté the sliced yellow squash and chopped onion until they're tender, about 5-7 minutes.
  3. In a large bowl, mix the sautéed squash and onions with the shredded cheddar cheese, sour cream, and beaten eggs. Season with salt and pepper.
  4. Gently fold half of the crushed butter crackers into the mixture.
  5. Pour the mixture into a greased baking dish and sprinkle the remaining crushed crackers on top.
  6. Drizzle the melted butter over the casserole.
  7. Bake for about 30-35 minutes or until golden and bubbly.
  8. Let it cool for a few minutes before serving.

Notes

You can prepare this casserole ahead of time and store it in the fridge. Feel free to add other vegetables like zucchini or bell peppers for variety.
