Ingredients
  

For the Za'atar Fries
  • 3 large russet potatoes Washed and peeled if desired
  • 2 tablespoons olive oil
  • 2 tablespoons za'atar spice blend Key flavor component
  • Salt To taste
  • Fresh parsley For garnish, optional
For the Tahini Dip
  • ½ cup tahini
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • Salt To taste
  • Water To thin, as needed

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel (if desired) the russet potatoes, then cut them into thin fries.
  3. In a large bowl, toss the potato sticks with olive oil, za’atar spice, and a pinch of salt until all are coated.
Baking
  1. Spread the fries evenly on a baking sheet lined with parchment paper.
  2. Bake for 20–25 minutes, flipping halfway through for even cooking.
Tahini Dip Preparation
  1. While the fries are baking, combine tahini, lemon juice, minced garlic, and a pinch of salt in a bowl.
  2. Add water bit by bit until the desired consistency is achieved.
Serving
  1. Once the fries are done, sprinkle with fresh parsley (if using) and serve hot with the tahini dip.

Notes

Don’t skip the parchment paper! If desired, try adding other spices like chili powder or garlic powder to the fries. The tahini dip may appear lumpy but will come together beautifully with whisking.
