  • 2 tablespoons olive oil
  • 1 cup cherry tomatoes (halved)
  • 2 cloves garlic (minced)
  • 1 teaspoon Italian seasoning

Method
 

Preparation
  1. Spiralize your zucchini using a spiralizer or vegetable peeler.
  2. In a large skillet, heat olive oil over medium heat.
Cooking
  1. Add zucchini noodles, cherry tomatoes, and minced garlic to the skillet. Sauté for 3-5 minutes until zucchini is slightly tender.
  2. Sprinkle in Italian seasoning along with salt and pepper. Sauté for an additional 2-3 minutes.
Serving
  1. Plate the dish and add fresh basil on top if desired. Serve immediately.

Notes

For a spicy kick, add red pepper flakes while sautéing. Leftovers can be stored in an airtight container in the fridge for up to three days. This dish can be customized with grilled chicken or shrimp for added protein.
