  • 4 fillets cod fillets (fresh or thawed)
  • 1 can (14 oz) diced tomatoes (preferably fire-roasted for extra flavor)
  • 1/4 cup fresh basil, chopped (or 1 tablespoon dried basil)
  • 3 cloves garlic, minced
  • 1 medium onion, diced
  • 2 tablespoons olive oil
  • to taste Salt and pepper
  • Lemon wedges for serving because lemon makes everything better!

Method
 

Cooking Steps
  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat.
  2. Add the diced onion and minced garlic, and sauté until soft and translucent, about 3-4 minutes.
  3. Pour in the can of diced tomatoes (juice and all) along with chopped fresh basil. Stir and season with salt and pepper.
  4. Gently nestle the cod fillets into the sauce, cover, and let simmer on low heat for about 10-12 minutes until the fish flakes easily with a fork.
  5. Serve the cod with the sauce spooned over it and lemon wedges on the side.

Notes

If the sauce looks a bit lumpy, it's part of the charm! Leftover sauce is a great pasta base. You can make the sauce ahead of time and reheat when ready to cook the fish.
