Cooking Steps
- In a large skillet, heat 2 tablespoons of olive oil over medium heat.
- Add the diced onion and minced garlic, and sauté until soft and translucent, about 3-4 minutes.
- Pour in the can of diced tomatoes (juice and all) along with chopped fresh basil. Stir and season with salt and pepper.
- Gently nestle the cod fillets into the sauce, cover, and let simmer on low heat for about 10-12 minutes until the fish flakes easily with a fork.
- Serve the cod with the sauce spooned over it and lemon wedges on the side.
Notes
If the sauce looks a bit lumpy, it's part of the charm! Leftover sauce is a great pasta base. You can make the sauce ahead of time and reheat when ready to cook the fish.
