  • 2 tablespoons maple syrup Adjust based on your sweet tooth.
  • 1 lemon zest of 1 lemon
  • 1 lemon juice of 1 lemon
  • 1/2 teaspoon vanilla extract

Preparation
  1. In a medium-sized bowl, whisk together the almond milk, maple syrup, lemon zest, lemon juice, and vanilla extract.
  2. Add the chia seeds to your mixture and stir well to ensure they are evenly distributed.
  3. Cover the bowl and place it in the fridge for at least 2 hours or overnight. Alternately, if you're short on time, let it sit for 5-10 minutes, stir again to break up clumps, then refrigerate.
Serving
  1. Scoop your pudding into bowls or jars. Top it with your favorite berries and maybe a bit more lemon zest.
  2. Enjoy your zesty pudding immediately, scooping with a spoon.

Notes

Feel free to swap the lemon for other citrus fruits like lime or orange. You can blend the chia pudding for a smoother texture if desired. Store leftovers in an airtight container in the fridge for up to 4-5 days.
