Preparation
- In a small bowl, mix together the lime juice, olive oil, chili powder, garlic powder, salt, and pepper.
- Place the chicken breasts in a shallow dish or a resealable plastic bag. Pour the marinade over the chicken, making sure each piece is well-coated. Allow it to marinate in the fridge for at least 30 minutes, or up to 2 hours.
Cooking
- Heat up a grill or skillet over medium-high heat.
- Once hot, add the marinated chicken. Cook for about 6-7 minutes on each side, or until the chicken reaches an internal temperature of 165°F.
Serving
- Once cooked, remove the chicken from the heat and let it rest for a few minutes. Serve it on a platter, garnished with fresh cilantro.
Notes
For an extra kick, add diced jalapeños to the marinade. If chicken gets a little charred, the caramelized bits add delightful flavor. This chicken is great in salads, wraps or on nachos for leftovers.
