- If you haven’t grated your carrots yet, use a box grater or a food processor to shred them and place in a mixing bowl.
- Drizzle the lemon juice and olive oil over your grated carrots. Sprinkle in the salt and pepper.
- Mix everything together until every carrot shred is evenly coated in the dressing.
- Add the chopped parsley (or cilantro) and optional raisins or nuts, mixing well to combine.
- You can serve this salad immediately or let it chill in the fridge for about 20 minutes to allow flavors to meld.
Notes
Leftover carrots can be used for this recipe. For gourmet flair, consider adding a dash of cumin or feta cheese. Store-bought pesto can also be a convenient substitute for fresh herbs.
