- 1 lb prawns, peeled and deveined
- ½ lb lobster meat, cooked and chopped
- ¼ cup butter
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup heavy cream
- 4 cups fish or seafood broth
- 2 tomatoes, diced
- 1 teaspoon paprika
- Salt and black pepper to taste
- Fresh chives or parsley for garnish
Instructions
- Sauté the butter in a large pot over medium heat. Add the onion and garlic, cooking until softened and fragrant, about 5-7 minutes.
- Add the fish broth and bring it to a simmer. Toss in the diced tomatoes, paprika, salt, and pepper. Let it all meld together for about 10 minutes.
- Blend the soup using an immersion blender until smooth, or carefully transfer in batches to a regular blender. Return it to the pot once blended.
- Add the heavy cream and let it simmer for an additional 5 minutes, avoiding boiling to prevent curdling.
- Finish by adding the prawns and lobster, cooking until the prawns are pink and opaque, about 3-5 minutes.
- Serve the bisque in bowls garnished with fresh chives or parsley.
Notes
Maintain medium heat while cooking to avoid burning the base ingredients. Use fresh seafood for the best flavor.
