- 3 large yellow onions, thinly sliced
- 4 tablespoons butter (or olive oil)
- 2 tablespoons fresh thyme leaves
- 2 cloves garlic, minced
- 1 cup beef broth (or vegetable broth)
- 1½ cups Gruyère cheese, grated
- ½ cup Parmesan cheese, grated
- Salt and freshly ground black pepper to taste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
Instructions
- Prepare the potatoes by washing and slicing them into ¼-inch rounds.
- Caramelize the onions in butter over medium heat for 25-30 minutes until deep golden brown.
- Add minced garlic and thyme to the onions, cooking for 1 minute.
- Pour in beef broth, Worcestershire sauce, and Dijon mustard, simmering for 5 minutes.
- Layer potato slices, onion mixture, and cheese in a greased baking dish, ending with cheese.
- Bake covered at 375°F for 30 minutes, then uncovered for an additional 20-25 minutes until bubbly and golden brown.
Notes
For a vegetarian version, substitute vegetable broth and ensure the Worcestershire sauce is vegetarian.
