Ingredients

Scale
  • 2 pounds Yukon Gold potatoes, sliced
  • 3 large yellow onions, thinly sliced
  • 4 tablespoons butter (or olive oil)
  • 2 tablespoons fresh thyme leaves
  • 2 cloves garlic, minced
  • 1 cup beef broth (or vegetable broth)

  1. Prepare the potatoes by washing and slicing them into ¼-inch rounds.
  2. Caramelize the onions in butter over medium heat for 25-30 minutes until deep golden brown.
  3. Add minced garlic and thyme to the onions, cooking for 1 minute.
  4. Pour in beef broth, Worcestershire sauce, and Dijon mustard, simmering for 5 minutes.
  5. Layer potato slices, onion mixture, and cheese in a greased baking dish, ending with cheese.
