- 1 lb ground beef (or ground turkey)
- 1 medium onion, finely chopped
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 (10.5 oz) can cream of mushroom soup (or cream of chicken)
- 1 (14.5 oz) can diced tomatoes, drained
- 1 cup frozen corn (or canned, drained)
- 1/2 cup beef broth (or water with Worcestershire)
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme or Italian seasoning
- Salt and black pepper, to taste
- 1 1/2 cups shredded cheddar cheese, divided
- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/4 cup cold butter, cut into small cubes
- 3/4 cup milk (add more if needed)
- 1 egg, beaten (for brushing — optional)
Instructions
- Preheat your oven to 400°F (200°C). Lightly grease your 9×13-inch baking dish.
- Heat a large skillet over medium-high heat. Add the ground beef, breaking it up with a spatula. Cook until no longer pink, about 6-8 minutes. Drain excess fat if needed.
- Add the chopped onion and bell pepper to the skillet with the beef. Cook until softened, about 4-5 minutes. Stir in the garlic and cook for 30 seconds until fragrant.
- Reduce heat to medium. Stir in the cream of mushroom soup, diced tomatoes, corn, beef broth, Worcestershire sauce, and dried thyme. Mix well and simmer 3-5 minutes until hot and slightly thickened. Season with salt and pepper. Remove from heat. Stir in 1 cup of shredded cheddar cheese so it melts into the filling.
- Spoon the hot filling into your greased 9×13 pan and spread evenly. Set aside.
- In a medium bowl, whisk together flour, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in milk until a soft dough forms.
- Drop the biscuit dough by spoonfuls across the filling, spacing them to allow for puffing. Optionally brush with beaten egg for a golden finish and sprinkle remaining cheese on top.
- Bake for 20-25 minutes, or until biscuits are golden and a knife inserted comes out hot.
- Let the pie sit for 5-10 minutes before serving.
Notes
For a vegetarian option, substitute lentils or mushrooms and use vegetable broth. Leftovers can be reheated in the oven for best results.
