- ½ cup unsalted butter, melted
- ¼ cup granulated sugar
- 16 oz cream cheese, softened
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- Zest and juice of 2 lemons
- 1 cup fresh blueberries
Instructions
- Preheat your oven to 325°F (160°C).
- Prepare the crust: Mix graham cracker crumbs, melted butter, and sugar until it resembles wet sand. Firmly press into a greased 9×13-inch baking pan and bake for 10 minutes. Let cool.
- Make the filling: Beat cream cheese with granulated sugar and vanilla extract until smooth. Add eggs one at a time, mixing well after each addition. Stir in lemon zest and juice.
- Fold in the blueberries carefully.
- Pour the filling over the cooled crust and bake for 25-30 minutes until the edges are set with a slight jiggle in the center.
- Chill at room temperature, then refrigerate for at least 2 hours before cutting into squares.
Notes
For added zest, consider adding more lemon zest. Store in an airtight container in the refrigerator for up to one week.
