  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • Zest and juice of 2 lemons
  • 1 cup fresh blueberries

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Prepare the crust: Mix graham cracker crumbs, melted butter, and sugar until it resembles wet sand. Firmly press into a greased 9×13-inch baking pan and bake for 10 minutes. Let cool.
  3. Make the filling: Beat cream cheese with granulated sugar and vanilla extract until smooth. Add eggs one at a time, mixing well after each addition. Stir in lemon zest and juice.
  4. Fold in the blueberries carefully.
  5. Pour the filling over the cooled crust and bake for 25-30 minutes until the edges are set with a slight jiggle in the center.
