- Season the chicken breasts with a sprinkling of salt and pepper.
Cooking
- Heat the olive oil in a large skillet over medium-high heat.
- Add the chicken breasts and sauté for about 5-6 minutes per side, until they’re golden brown.
- In a small bowl, whisk together the balsamic vinegar, honey, and minced garlic.
- Once the chicken is browned, pour the glaze mixture over it, lower the heat, and let it simmer for another 10 minutes.
- Remove the skillet from the heat and sprinkle the mozzarella cheese over the chicken.
- Cover for a few minutes to allow the cheese to melt.
Serving
- Plate the chicken, drizzle any remaining glaze over the top, and garnish with fresh basil if desired.
Notes
Feel free to substitute chicken thighs for breasts, and add veggies like bell peppers or zucchini for a colorful addition.
