Main Ingredients
  • 2 slices slices of your favorite bread Sourdough works wonderfully!
  • 1 tablespoon butter For a perfect golden crust.
  • 2 ounces goat cheese Or mozzarella if you prefer.
  • ΒΌ cup fresh blueberries
  • 1 tablespoon balsamic glaze Store-bought or homemade.
  • to taste salt and pepper

Method
 

Preparation
  1. Get all your ingredients on the counter.
  2. Spread the butter on one side of each slice of bread.
  3. Place one slice of bread, butter side down, in a skillet over medium heat.
  4. Layer on the goat cheese, followed by the blueberries. Drizzle the balsamic glaze over the top and sprinkle with salt and pepper.
  5. Place the other slice of bread on top, butter side facing up.
  6. Flip the sandwich after about 3-4 minutes, achieving a golden crust.
  7. Cook the other side for an additional 3-4 minutes, applying a little pressure with a spatula.
  8. Remove the sandwich, slice it in half, and serve with extra blueberries on the side.

Notes

For cheese options, mozzarella or sharp cheddar make great alternatives. If you prefer a different flavor, use a balsamic reduction or honey. A cast iron skillet yields the best results!
