Preparation
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the dry ingredients: flour, baking soda, baking powder, salt, and chai spice mix.
- In another bowl, whisk together the wet ingredients: pumpkin puree, maple syrup, vegetable oil, eggs, and vanilla extract until smooth.
- Gradually fold the dry ingredients into the wet ingredients. Do not overmix.
- If desired, add chopped nuts or chocolate chips.
Baking
- Pour the batter into a greased loaf pan.
- Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for about 15 minutes before transferring it to a wire rack.
- Allow it to cool completely before slicing.
Notes
For a healthier option, swap half the oil for unsweetened applesauce. For dairy-free, use plant-based milk in the chai spice mix.
