  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 2 teaspoons chai spice mix You can find this at the store or make your own.
Wet Ingredients
  • 0.5 cups pure pumpkin puree
  • 0.5 cups maple syrup Get the good stuff for best flavor.
  • 0.25 cups vegetable oil Or melted coconut oil, if preferred.
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Optional: Chopped nuts or chocolate chips For extra flair!

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the dry ingredients: flour, baking soda, baking powder, salt, and chai spice mix.
  3. In another bowl, whisk together the wet ingredients: pumpkin puree, maple syrup, vegetable oil, eggs, and vanilla extract until smooth.
  4. Gradually fold the dry ingredients into the wet ingredients. Do not overmix.
  5. If desired, add chopped nuts or chocolate chips.
Baking
  1. Pour the batter into a greased loaf pan.
  2. Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
  3. Let the bread cool in the pan for about 15 minutes before transferring it to a wire rack.
  4. Allow it to cool completely before slicing.

Notes

For a healthier option, swap half the oil for unsweetened applesauce. For dairy-free, use plant-based milk in the chai spice mix.
