Ingredients
  

For the Pie Filling
  • 1 pound shrimp, peeled and deveined
  • 1 pound firm white fish (like cod or haddock), cut into chunks
  • 1 cup heavy cream Can be substituted with half-and-half
  • 1 cup chicken or fish broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 tablespoons lemon juice Adds flavor enhancement
  • Salt and pepper to taste
For the Cheddar Bay Biscuit Topping
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold butter, cut into cubes
  • 1 cup shredded sharp cheddar cheese
  • 3/4 cup buttermilk
  • 2 tablespoons garlic butter (for brushing on top)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large pot over medium heat, combine the heavy cream and chicken broth.
  3. Stir in garlic powder, onion powder, salt, and pepper. Bring this delicious blend to a simmer.
  4. Toss in the shrimp and fish chunks, cooking until they’re just opaque (about 3-4 minutes). Be careful not to overcook them.
  5. Remove the pot from the heat and stir in the lemon juice.
Biscuit Preparation
  1. In a separate bowl, mix the flour, baking powder, and salt.
  2. Cut in the cold butter with a pastry cutter or your fingers until the mix resembles coarse crumbs.
  3. Stir in the cheddar cheese and buttermilk until just combined.
Assembly and Baking
  1. Transfer the seafood mixture to a baking dish.
  2. Spoon dollops of the biscuit dough on top, evenly spreading them out.
  3. Melt the garlic butter and brush it generously over the biscuit topping.
  4. Bake for about 20-25 minutes, or until the biscuits are puffed up and golden brown.
  5. Allow to rest for a few minutes before serving.

Notes

Consider substituting seafood based on availability. You can prepare the filling earlier in the day to save time. If your biscuit dough is sticky, use a bit of flour for dusting.
