Preparation
- Preheat your oven to 375°F (190°C).
- Lightly grease a muffin tin with cooking spray or oil.
- In a large bowl, whisk together the eggs, cottage cheese, garlic powder, salt, and pepper. Add any fresh herbs if using.
Mixing
- Fold in the shredded cheese and diced vegetables.
Baking
- Pour the egg mixture into the prepared muffin tin, filling each cup about ¾ full.
- Bake for approximately 20-25 minutes or until the tops are set and golden.
Cool and Serve
- Let them cool for a few minutes before removing from the tin.
Notes
Customize the ingredients based on your preferences. Store in an airtight container in the fridge for up to a week. Reheat in the microwave for around 30 seconds. Can substitute cottage cheese with Greek yogurt or ricotta.
