  • 6 large large eggs
  • 1.5 cups cottage cheese The unsalted kind works best
  • 1 cup shredded cheese Can use cheddar or your favorite cheese
  • 1 cup diced vegetables Bell peppers, spinach, or whatever you have
  • 1 tsp garlic powder
Seasoning

  • to taste Pepper
  • optional fresh herbs For that gourmet touch

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a muffin tin with cooking spray or oil.
  3. In a large bowl, whisk together the eggs, cottage cheese, garlic powder, salt, and pepper. Add any fresh herbs if using.
Mixing
  1. Fold in the shredded cheese and diced vegetables.
Baking
  1. Pour the egg mixture into the prepared muffin tin, filling each cup about ¾ full.
  2. Bake for approximately 20-25 minutes or until the tops are set and golden.
Cool and Serve
  1. Let them cool for a few minutes before removing from the tin.

Notes

Customize the ingredients based on your preferences. Store in an airtight container in the fridge for up to a week. Reheat in the microwave for around 30 seconds. Can substitute cottage cheese with Greek yogurt or ricotta.
