Preparation
- Preheat your oven to 375°F (190°C).
- Carefully slice a pocket into each chicken breast.
- In a bowl, combine the chopped spinach, cream cheese, mozzarella cheese, garlic powder, dried basil, salt, and pepper.
- Spoon the filling into the pockets of the chicken.
- Heat a drizzle of olive oil in a skillet over medium heat. Sear the chicken breasts until golden brown on both sides, about 3-4 minutes per side.
- Transfer the seared chicken to a baking dish and bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F.
- Let the chicken rest for a few minutes before slicing and serving.
Notes
Make it ahead by assembling the chicken earlier in the day and refrigerating until ready to cook. Swap the cream cheese for feta or cheddar for different flavors. Avoid overstuffing to prevent mess.
