Preparation
- Season the chicken: Sprinkle both sides of the chicken breasts generously with salt and pepper.
- Sear the chicken: In a large skillet over medium-high heat, melt the butter and add the chicken. Cook until golden brown, about 5-6 minutes per side.
- Add the garlic: Toss in the minced garlic and sauté for about 30 seconds until fragrant.
- Create the sauce: Pour in the chicken broth and heavy cream, then add the Italian seasoning. Stir and bring to a gentle simmer, letting it bubble for about 5 minutes.
- Add the cheese: Stir in the Parmesan cheese slowly and allow the sauce to thicken for another 5 minutes.
- Finish the chicken: Return the chicken to the skillet and spoon the sauce over the top, cooking together for another 5 minutes.
- Garnish and serve: Sprinkle freshly chopped parsley on top just before serving.
Notes
Don't rush the searing for a golden crust. Customize with your favorite veggies like spinach or broccoli. You can also double the sauce for serving over pasta or rice. Leftovers can be kept in an airtight container for up to 3 days.
