Ingredients
  

Mushroom and Coating Ingredients
  • 1 pound king oyster mushrooms, sliced into bite-sized pieces Ensure they are cut into pieces about an inch thick
  • 1 cup all-purpose flour (or gluten-free alternative) Can swap for preferred gluten-free flour
  • 1 cup unsweetened plant-based milk (almond, soy, oat) Choose your favorite type
  • 1 cup breadcrumbs (preferably Panko) For extra crunchiness
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • to taste Salt and pepper
  • as needed Vegetable oil for frying Oil depth should be about half an inch

Method
 

Preparation
  1. Slice the king oyster mushrooms into pieces about an inch thick.
Battering
  1. In one bowl, mix the flour with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. In another bowl, pour the plant-based milk.
  3. In a third bowl, place the breadcrumbs.
Dredging
  1. Dip each mushroom slice into the flour mixture, then into the plant-based milk, and finally roll it in the breadcrumbs.
  2. For extra crunch, use more breadcrumbs.
Frying
  1. Heat oil in a large skillet over medium heat.
  2. Test the oil by dropping in a crumb; it should sizzle.
  3. Carefully add the coated mushrooms into the skillet, cooking for 3-4 minutes on each side until golden brown.
Final Touch
  1. Transfer cooked mushrooms to a plate lined with paper towels to absorb excess oil.
  2. Sprinkle with salt while still hot.

Notes

Fry in batches to avoid overcrowding. For a healthier option, bake at 400°F for 15-20 minutes.
