Method
 

Preparation
  1. In a large pot, heat the olive oil over medium heat.
  2. Add minced garlic and grated ginger, sautéing until fragrant, about 2 minutes.
Cooking the Broth
  1. Pour in the vegetable or chicken broth and bring it to a gentle simmer.
  2. Add sliced carrots and bell peppers, simmer for about 5 minutes.
  3. Stir in chopped kale until wilted.
  4. Add rice noodles and cook as per package instructions (about 5-7 minutes).
  5. Stir in soy sauce or tamari and adjust seasoning with salt and pepper.
Serving
  1. Pour the broth into bowls and garnish with cilantro, green onions, or lime wedges.
