  • 4 cups vegetable broth homemade or store-bought
  • 2 tablespoons miso paste preferably white for milder flavor
  • 1 tablespoon freshly grated ginger for the best taste
  • 1 juice lemon freshly squeezed
  • 1 tablespoon tamari or soy sauce
Optional Toppings
  • to taste sliced green onions
  • to taste sesame seeds
  • to taste fresh kale or spinach leaves

Method
 

Preparation
  1. In a large pot, pour in your vegetable broth and heat it over medium heat until warm but not boiling.
  2. In a small bowl, whisk the miso paste with a little bit of warm broth until smooth to avoid lumps.
  3. Stir the ginger and miso mixture back into the pot of warm broth. Cook for about 5 minutes.
  4. Squeeze in the lemon juice and add the tamari or soy sauce. Stir gently.
  5. Serve the broth hot, topping with optional sliced green onions, sesame seeds, and greens.

Notes

Substitute miso with tahini if needed. For added texture, consider adding mushrooms or sliced carrots. This broth keeps well in the fridge for a few days, just reheat when needed.
