Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the lemon cake mix, water, vegetable oil, and eggs. Mix until well combined, about 2-3 minutes.
- Fold in the thawed lemonade concentrate.
Baking
- Pour the batter into a greased 9x13 inch cake pan.
- Bake for 28-32 minutes, or until a toothpick inserted in the center comes out clean.
Preparing the Glaze
- In a small bowl, mix together the powdered sugar, lemon juice, and water until smooth.
Serving
- Once the cake has cooled completely, drizzle the lemon glaze on top and serve.
Notes
Make it ahead: This cake tastes better the next day when covered and rested overnight. You can also freeze the cake without glaze for up to three months.
