Ingredients
  

For the Cake
  • 1 box lemon cake mix Store-bought lemon cake mix
  • 1 cup water
  • 1/3 cup vegetable oil
  • 3 large eggs
  • 1 cup lemonade concentrate (thawed) Frozen lemonade concentrate, thawed before use
For the Lemon Glaze
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice Freshly squeezed is best
  • 1 tablespoon water

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the lemon cake mix, water, vegetable oil, and eggs. Mix until well combined, about 2-3 minutes.
  3. Fold in the thawed lemonade concentrate.
Baking
  1. Pour the batter into a greased 9x13 inch cake pan.
  2. Bake for 28-32 minutes, or until a toothpick inserted in the center comes out clean.
Preparing the Glaze
  1. In a small bowl, mix together the powdered sugar, lemon juice, and water until smooth.
Serving
  1. Once the cake has cooled completely, drizzle the lemon glaze on top and serve.

Notes

Make it ahead: This cake tastes better the next day when covered and rested overnight. You can also freeze the cake without glaze for up to three months.
