Preparation
- Preheat your oven to 400°F (200°C).
- Pat the cod filets dry with a paper towel and season both sides with salt and pepper.
- In a bowl, combine the panko breadcrumbs, chopped capers, lemon zest, and parsley. Drizzle in the olive oil and mix until everything is well combined.
- Place the cod filets on a baking sheet lined with parchment paper and spoon the breadcrumb mixture generously on top of each filet.
Cooking
- Pop the baking sheet in the oven and let it bake for about 12-15 minutes until the topping is golden brown and the cod flakes easily with a fork.
- Before serving, drizzle a little fresh lemon juice over the top.
Notes
Pair this cod with a simple salad or roasted veggies for a complete meal. If you want to avoid the oven, you can cook in a skillet over medium heat for about 4-5 minutes on each side before topping with the mixture.
