Ingredients
  

Fish and Seasoning
  • 2 filets cod filets (about 6 ounces each)
  • Salt and pepper Salt and pepper to taste Use to season filets
Topping
  • 1/4 cup breadcrumbs (panko works great for extra crunch) Panko recommended for texture
  • 2 tablespoons capers, rinsed and chopped
  • 1 tablespoon fresh parsley, chopped Optional for garnish
  • 1 tablespoon olive oil For mixing with topping
  • 1 lemon, zested and juiced Adds flavor to the topping and for drizzling

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Pat the cod filets dry with a paper towel and season both sides with salt and pepper.
  3. In a bowl, combine the panko breadcrumbs, chopped capers, lemon zest, and parsley. Drizzle in the olive oil and mix until everything is well combined.
  4. Place the cod filets on a baking sheet lined with parchment paper and spoon the breadcrumb mixture generously on top of each filet.
Cooking
  1. Pop the baking sheet in the oven and let it bake for about 12-15 minutes until the topping is golden brown and the cod flakes easily with a fork.
  2. Before serving, drizzle a little fresh lemon juice over the top.

Notes

Pair this cod with a simple salad or roasted veggies for a complete meal. If you want to avoid the oven, you can cook in a skillet over medium heat for about 4-5 minutes on each side before topping with the mixture.
