- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the cherry tomatoes, zucchini, bell pepper, and red onion. Drizzle with olive oil, lemon juice, oregano, salt, and pepper. Toss gently.
- Place the salmon fillets atop the vegetable medley and sprinkle with extra oregano and a pinch of salt.
Cooking
- Transfer the mixture to a baking dish and bake for about 18-20 minutes, or until the salmon is cooked through and flakes easily.
- After removing from the oven, let it rest for a few minutes and garnish with fresh parsley before serving.
Notes
For extra flavor, consider adding lemon zest to the dish. Use pre-chopped vegetables to save time if you're in a hurry.
