  • 2 fillets salmon fillets (about 6 oz each)
  • 1 cup cherry tomatoes (halved)
  • 1 medium zucchini (sliced into half-moons)
  • 1 medium bell pepper (diced; use any color you fancy)
  • 1/2 medium red onion (thinly sliced)
Seasoning and Garnish
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons dried oregano
  • to taste Salt and pepper for seasoning

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the cherry tomatoes, zucchini, bell pepper, and red onion. Drizzle with olive oil, lemon juice, oregano, salt, and pepper. Toss gently.
  3. Place the salmon fillets atop the vegetable medley and sprinkle with extra oregano and a pinch of salt.
Cooking
  1. Transfer the mixture to a baking dish and bake for about 18-20 minutes, or until the salmon is cooked through and flakes easily.
  2. After removing from the oven, let it rest for a few minutes and garnish with fresh parsley before serving.

Notes

For extra flavor, consider adding lemon zest to the dish. Use pre-chopped vegetables to save time if you're in a hurry.
