  • 2 cups fresh spinach A little more wouldn’t hurt!
  • 1 cup crumbled feta cheese
  • 4 large eggs
  • 1/2 cup milk (dairy or plant-based)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 teaspoon dried oregano (or Italian seasoning works, too!)
  • 1 clove garlic, minced Because what is life without garlic?
  • 1/2 cup cherry tomatoes, halved For that pop of color
  • as needed Olive oil For greasing the baking dish

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). You want this baby ready when the dish is!
  2. Lightly grease a baking dish with a drizzle of olive oil. Make sure you reach those corners; nobody wants a sticky situation.
  3. In a large bowl, whisk together the eggs, milk, salt, pepper, and oregano.
  4. Gently fold in the fresh spinach, crumbled feta, garlic, and halved cherry tomatoes.
  5. Pour the mixture into your greased baking dish and ensure it’s evenly spread out.
  6. Pop it into the preheated oven and let it bake for about 30-35 minutes or until it’s set and slightly golden.
  7. Let it cool for a few minutes before cutting into squares. Serve warm.

Notes

Layer it up with other veggies like bell peppers or zucchini for added taste. You can also try different kinds of cheese for customization. This dish is perfect for meal prep; bake ahead of time and reheat when needed.
