Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan. Optionally line it with parchment paper.
Make the Brownie Batter
- In a large saucepan, melt the butter over low heat. Once melted, remove from heat and stir in the sugar, vanilla, and eggs until combined.
- Sift in the flour, cocoa powder, salt, and baking powder. Mix until there are no dry spots.
Prepare the Cheesecake Layer
- In a mixing bowl, beat the softened cream cheese with sugar until smooth. Add the egg, peanut butter, and vanilla extract. Mix well.
Layer It Up
- Spread half of the brownie mix into the prepared pan. Dollop the cheesecake mixture on top in big spoonfuls.
- Spread the remaining brownie mix on top and swirl gently with a knife or spatula.
Bake
- Bake for about 30-35 minutes. Brownies are done when a toothpick inserted in the middle comes out with moist crumbs.
Cool & Slice
- Allow to cool completely before slicing.
Notes
Chill for extra creaminess after baking for cleaner slices. Use crunchy peanut butter for a textural surprise. For an extra treat, add chocolate chips to the brownie batter.
