Ingredients
  

For the Brownie Layer
  • 1 cup unsalted butter Melted
  • 2 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs Room temperature
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon salt
  • ½ teaspoon baking powder
For the Cheesecake Swirl
  • 8 oz cream cheese Softened
  • ½ cup granulated sugar
  • 1 large egg Room temperature
  • 1 teaspoon vanilla extract
  • ½ cup peanut butter Smooth preferred

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan. Optionally line it with parchment paper.
Make the Brownie Batter
  1. In a large saucepan, melt the butter over low heat. Once melted, remove from heat and stir in the sugar, vanilla, and eggs until combined.
  2. Sift in the flour, cocoa powder, salt, and baking powder. Mix until there are no dry spots.
Prepare the Cheesecake Layer
  1. In a mixing bowl, beat the softened cream cheese with sugar until smooth. Add the egg, peanut butter, and vanilla extract. Mix well.
Layer It Up
  1. Spread half of the brownie mix into the prepared pan. Dollop the cheesecake mixture on top in big spoonfuls.
  2. Spread the remaining brownie mix on top and swirl gently with a knife or spatula.
Bake
  1. Bake for about 30-35 minutes. Brownies are done when a toothpick inserted in the middle comes out with moist crumbs.
Cool & Slice
  1. Allow to cool completely before slicing.

Notes

Chill for extra creaminess after baking for cleaner slices. Use crunchy peanut butter for a textural surprise. For an extra treat, add chocolate chips to the brownie batter.
